New Visa after leaving the country?

Hello all, I was living in Thailand for half a year as a student with an ED visa and it expires by the 31.12.2024. 

Now I was wondering if I can leave the country tomorrow(to visit Vietnam) and come back on the 2.1.2025 to Bangkok to get the tourist visa stamp again. I would need to come back to Bangkok for another week before i leave back to Germany. 

Does somebody now if I am allowed to come back here or will there be any complications? Thanks for your help :)
