My home coffee roasting journey hit a snag! Six months in, and suddenly my beloved Americano and pour overs taste like bitter, acidic water.  It's not just me; I've noticed a worrying trend online – coffee taste fatigue is a real thing!  Many experienced coffee drinkers report losing their ability to discern subtle flavor notes, especially after extended periods of consuming the same type of coffee. I've been rotating single-origin beans, resting them for a week, and consuming them within three weeks of roasting, following all the best practices. I'm still able to taste and smell other foods without issue, so it's not a complete loss of taste. Could this be taste bud fatigue?  Is it a problem with my roasting technique?
