Thai iced tea, or cha yen, is Thailand's iconic drink found at every street corner. Made with strong black tea, sweetened condensed milk, and evaporated milk poured over ice, it's the perfect antidote to Thailand's tropical heat. My first taste was at The King and I in Calgary—deep black tea with spices and cream, not the orange version with food coloring. That restaurant closed, but I've chased that flavor ever since. At Pattaya Floating Market, I finally found it. A vendor brewed strong black tea in an earthenware pot—inky, aromatic, and authentic. She poured it over ice with sugar and milk. Simple, refreshing, and closer to my memory. Traditional cha yen uses robust black tea, sometimes flavored with star anise or cardamom. The bright orange color common abroad comes from commercial blends—a restaurant adaptation, not the street original. Make it at home: brew strong black tea, add sugar and condensed milk while warm, chill, then pour over ice. Top with evaporated milk for that smooth, velvety texture with a slight caramel note. Whether from a street vendor or homemade, cha yen remains Thailand's most beloved refreshment—a daily staple that's conquered the world.
